Premium quality 28-day aged beef is sourced from local herds that are bred for eating and not from dairy herds. Common breeds include Sussex, Red Polls, Lincoln Reds & Aberdeen Angus. The beef is carefully aged on the bone for a minimum of 28-days and then expertly butchered.
